Farm-Fresh Frittata with Pasture-Raised Eggs

This simple frittata is the perfect way to showcase the rich flavour and golden yolks of Tin Shed Farm’s pasture-raised eggs. Great for breakfast, lunch, or a light dinner.

Ingredients:

  • 6 Tin Shed Farm pasture-raised eggs

  • 1 cup seasonal vegetables (e.g., spinach, cherry tomatoes, zucchini)

  • ½ cup cheese (feta or cheddar)

  • 1 small onion, diced

  • 1 tbsp olive oil

  • Salt & pepper, to taste

Method:

  1. Preheat oven to 180°C.

  2. In an ovenproof pan, heat olive oil and sauté onion until soft.

  3. Add vegetables and cook for 2–3 minutes until just tender.

  4. Whisk eggs with salt and pepper, then pour over vegetables.

  5. Sprinkle with cheese and cook on the stovetop for 2–3 minutes until edges set.

  6. Transfer to oven and bake for 10–12 minutes until the centre is firm.

Serving Tip:
Serve warm with a side salad or crusty bread. Perfect for using whatever’s fresh from the garden or market.
